Recipe: Brown Sugar Crusted Scones

4 Cups Flour

3 TBLSP. Sugar

4 tsp. Baking Powder

1/2 tsp Salt

1/2 tsp. Cream of Tartar

3/4 cup Cold Butter (no substitutes)

1 Egg, separated

1 1/2 Cups Milk

1/4 Cup Brown Sugar

1 Tbsp. Cinnamon

In a bowl combine the first five ingredients; cut in butter until crumbly.  In a bowl, whisk egg yolk and milk; add to dry ingredients just until moistened.  It’s important not to overwork the dough.  Turn out of bowl onto a floured surface.  Knead 10 times.  NO more.  Divide dough in half and shape each half into a rectangle about 5 inches by 8 inches.  Cut each rectangle into 8 rectangles.

Combine Brown Sugar and Cinnamon in a low bowl.  Flatten each rectangle slightly and pat it into the brown sugar/cinnamon mixture and cover each side liberally with the sugar.  Twist each rectangle and place on a greased cookie sheet.  Bake in a hot oven (425) for 12-15 minutes or until golden brown.  Serve while still warm.  SO YUMMY!
