Recipe: Double Chocolate Dream Cookies

Double Chocolate Dream Cookies
2 1/4 cups flour
1/2 cup baking cocoa
1 tsp. baking soda
1/2 tsp. salt
1 cup shortening
1 cup brown sugar
3/4 cup white sugar
1 tsp. vanilla
2 eggs
2 cups chocolate chipsBeat shortening, brown sugar, white sugar, and vanilla until creamy. Beat in eggs about 2 minutes or until light and fluffy.

Combine flour, cocoa, soda and salt. Gradually add flour mixture to shortening mixture. Stir in chocolate chips.

Drop by rounded tablespoons onto baking sheets, flatten slightly. Bake in pre-heated 375 degree oven for 8 to 10 minutes or until puffed. The trick is to pull these out of the oven when they don’t look completely done. They’ll continue to cook while they cool down. Let stand 2 minutes; remove to wire racks to cool completely. Makes 4 1/2 dozen cookies.

    we made something similar to this a week or two ago…they didn’t last very long. and i’m feeling like chocolate is a necessary part of my daily survival, so i think i’m gonna hafta make these again…TODAY. šŸ™‚
